Toad in the hole

It’s been a while but I’m so excited about tonight’s dinner success I’m here writing about it. I have tried on many occasions to cook this dish but never with any luck – tonight we had Toad in the Hole…

Which to be fair you’d think I could manage when even I admit my Yorkshire Puddings are just Wow! But alas I have always struggled until tonight!

And it was so easy, I mixed my usual Yorkshire Pudding batter; cooked the sausages in the oven until they just started to go golden and then removed from the dish. I added a small amount of vegetable oil to the sausage fat in the roasting dish and put back into the oven with the temperature on high. When the oil was hot enough I placed the sausages back in, added the batter and popped back into the oven, reducing the heat to gas mark 6 and cooked for 30 minutes.

I was so so happy to see the batter rise I did a little dance. My first ever Toad in the Hole success and I am very proud, and luckily it was delicious too, I served with cheesy creamy mashed potato and gravy.

The tip to my success came from my super-bro who advised that I should always use a metal dish when cooking batter and it worked, he’s a chef for a reason.
