Jacket potato and kale

Inspired by current favourite cookbook Mary Berry’s Complete Cookbook, this evening we had a new style Jacket Potato stuffed with Kale and Mozzarella, and it was so delicious I just had to quickly share…

I quite often cook a jacket potato, scoop out the insides mix with cheese and then re-bake but this was a new recipe on me, Kale and Mozzarella and it was so simple.

Firstly bake the jacket potato (obviously!) when it’s cooked wash the Kale and then shake off the majority of water and pop into a saucepan and sweat on a low heat until it shrinks. Cut the top of the potato spoon out the insides and mix with the kale, some butter and the mozzarella, put mixture back in the potato jacket and pop back into the oven until golden.

Simple but delicious.
