Well the Christmas dinner preparation have well and truly begun in my house and as I type my Christmas Day goose is cooking slowly in the oven. I can’t give too much away as I don’t want my guests (who are probably reading this) to know all the secrets just yet – and what if it all goes wrong!
Thankfully all my vegetables and meat arrived safely so the horrendous supermarket shop was avoided and I feel good supporting independent suppliers.
What I can tell you is that the Goose was prepared yesterday, I removed the vast amount of goose fat (ready for my roast potatoes), rubbed with spice and season inside and out, stuffed with various ingredients and left overnight for the flavours to really sink into the bird. It’s been slowly roasting on a low heat for a few hours now and it’s smelling delicious. The cat won’t leave the kitchen! That’s all I’m willing to say at the moment, the rest will be shared…
Now I need to make some room in the fridge for the all important Champagne and wine as well as the compulsory Christmas morning Bucks Fizz.
