Duck breast

I just wanted to share with you a delicious duck breast recipe we cooked on Saturday night as it was just so lovely, so no hanging around below is the recipe.

What you need:
2 duck breasts, cheyenne pepper, black pepper
For the marinade/sauce:
125ml of stock (preferably chicken), 2 tbsp honey, 2 tbsp soy sauce, 2 tbsp red wine (more if you fancy a glass yourself while cooking), no more than 1 tbsp finely chopped root ginger, chopped fresh chilli (this shouldn’t be a fiery dish so just enough to taste) and some fresh lime juice.
Your oven will need to be at gas mark 6 / 200°C to finish this dish.

  • Score the fat side of the duck breast about 4 times and pop into a perfect fit oven dish
  • Mix all the ingredients together for the marinade and pour over the duck, leave for about 2 hours
  • Take the duck out of  the marinade, removing as much of the liquid as possible. Leave the marinade in the dish and pop into the oven
  • Rub the cheyenne pepper and black pepper into both sides of the duck breast
  • Put a frying pan over a medium/high heat and add a little oil. Lay the breasts skin side down in the pan and fry until the skin is crisp (about 4/5 minutes), then turn over and fry for a further 1 minute
  • Return the duck breast to the oven dish with the sauce, cover and cook for 30 minutes

After this time the duck should be perfectly pink, slice the breast and serve with your choice of accompaniments. Really quite simple but really tasty!
