I love cabbage… and one of my favourite ways to eat it, is to stir-fry, so I thought I would share this recipe:
What you need… bacon (although this is optional), cabbage (obviously), chinese five spice, sugar, ground nut oil.
What you do… cut the bacon into rough pieces, shred the cabbage finely. Next fry the bacon off naked in preferably a wok. When cooked through take off the heat, add the shredded cabbage and mix with the bacon and any juice from the bacon. If necessary add some ground nut oil (the cabbage should be very lightly coated with oil). Return to the heat and stir fry. Add the chinese five spice and just a little sugar. You only need to fry until the cabbage is hot then serve and… enjoy!
Why ground nut oil… it can sustain a high heat, (higher than olive oil) – so cooks at a higher temperature, great for frying, and will cook the cabbage quicker locking in more flavour – just make sure no-one you’re cooking for has a nut allergy.
The sugar… be very careful with this, I find you need just a little, add too much and you’ll ruin it. But everyone is different, so experiment, add to taste. You could add salt, but personally I don’t find this necessary.
