We’ve just spent a lovely time with friends who have been to stay for the weekend with their beautiful daughter. Being mid July it should have been a glorious sunny, warm weekend spent in the garden with a lovely Sunday afternoon BBQ. But not so, rain mixed in with a chilly wind, add more rain and then alot more. So what else to do than cook a scrumptious Sunday roast supper and spend with family and friends.
To celebrate us all being together we of course chilled a few bottles of cava. I know probably not the chosen wine to complement a roast but it definitely suited the occasion. I was cooking for 5 adults but to make this even more daunting I wasn’t just cooking for 1 chef but this time 2. I think (or hope) I suitably impressed.
Now I always think you can’t beat a home cooked roast dinner. Some how eating out for Sunday lunch never lives up to my expectation, potatoes aren’t roasted to my liking, not my chosen veg or the meat is over/under cooked. Not to blow my own trumpet I much prefer my own cooked roast dinner.
So our scrumptious roast supper…
- Pork joint stuffed with sage and onion, slow roasted with onion
- Roast potatoes not too large; not too small; cooked until crispy
- Sweet potatoes and parsnip roasted with fennel seed
- Carrot and swede mashed with butter, creme fraîche, seasoning and nutmeg
- Home-made yorkshire puddings
- Cauliflower cheese (the cauli not too soft)
- Home-made apple sauce
- Gravy – of course my stock used as a base and meat juices

And of course thank you to my house guest for helping prepare while putting the world to rights over a glass of bubbles! An absolutely fab meal and weekend.
