Tonight I’m meeting with some girl friends for a good old catchup and a bottle or two of Rosé wine and I can’t wait. I’ve got a lovely bottle of Australian Shiraz Cabernet chilling in my fridge and I can hear it calling my name. It’s going to be a fab evening I’m sure.
So before I head out I need to have something substantial and of course tasty to eat (always has to be tasty!).
So I’ve chosen chicken and chorizo in a tomato and pepper sauce – yum! I always know I love this but amazed each time how fabulous it is. My top tip for creating this is to fry the chorizo off naked first (no oil), it’ll fry in its own juices, remove from the pan, then fry chicken and any other ingredients in the chorizo oil. Hmmmm delicious…
This evening I chose to serve with rice. Now I’m not a rice lover at all, I find after a few mouthfuls I’m bored with it. But I have found a way to make it more interesting. So tonight I fried off some finely chopped onion in olive oil and then when the rice was cooked, as always in my microwave rice cooker, I mixed in the fried onions with the olive oil. Worked wonders, I went back for a second and third helping.

Oh and for those who were wondering the ham the other night was fabulous, definitely the right thing to roast with honey in the oven, tasted fab and all the fat was crispy.
