Spicy chicken, quick and easy

It’s been a busy week and now it’s Friday night, you want something easy for dinner but also something tasty and special to start off the weekend. So here’s a quick and easy meal for you which we have just had for our tasty friday night dinner.

First I ground up some cardamom seeds so I had a good pinch (actually I got the other half to do this with the mortar and pestle). In a good-sized bowl put 4 tablespoons of natural yoghurt. Add the ground cardamom, some turmeric, paprika, at least 1 glove of  crushed garlic and some finely chopped fresh chilli (I just used 1 but vary this depending on desired hotness). Mix all together with some lemon juice.

Cut 2 chicken breasts into strips and stir into the yoghurt mixture, along with some prawns although these could be optional.

Roughly chop some onion and fry in olive oil until slightly brown. Then add the chicken, prawns and yoghurt. I cooked this on a medium heat for about 20 minutes. In this time the chicken and prawns should cook and the yoghurt mix reduce.

Serve with basmati rice. I think it’s best to cook in a microwave rice cooker and finish off with a knob of butter and some pepper.

It was an amazingly tasty, easy meal which took about 45 minutes to prepare and cook. And of course don’t forget to accompany your meal with a nice chilled glass of white wine, a cheeky, dry but fruity number should do the trick… and actually I’m sure the cooking was helped by the glass of the same I had in hand!
